How our nutrient value changes in the kitchen

Today on Mercola’s site I learned that:

  • When we cook our broccoli in the microwave, we’ll lose 90% of the nutrients/antioxidants
  • If we steam our broccoli, 11% will be lost

Of course eating the broccoli raw will provide us with all nutrients.  This is a great time of year to include more raw foods into your diet.  They are cooling to our system and most do best on them during the warmer months.  Because our veggies can lose their pow during the cooking process try keeping them above water when steaming so that these nutrients don’t get lost.  Or try steaming them for less time.  There is no need to be using your microwave.  The extra minutes you’ll need for steaming will be well worth the effort!
